Tradition's Best Chef Choice - Stephen Cory Mattson!

mattsonWhen we go out to enjoy a meal in a restaurant and marvel over the food we have just consumed and savored, we wonder hummmmmm! That was excellent but do we wonder who actually prepared this amazing meal? At the “Pine Needles Lodge and Golf Club” Executive Chef Steven Cory Mattson is the creator and presenter of the most mouthwatering food in the Sandhills area and beyond.

Chef Mattson is married with two grown daughters and has traveled the world. Although he’s lovingly busy with all he does, but still finds time to write, cook at home with his family and enjoy his lifelong passion for surfing. Most of his travels have involved food and food preparation. He studied at The Culinary Institute of America in Hyde Park NY, and has a background in research and development. The chef prepares fabulous dishes in “The Crest” dining room, the “In the Rough” lounge along with several banquet and meeting facilities at Pine Needles.

Chef Mattson loves his work and where he works. He has a passion for his staff and watching them learn and create under his close attention and guidance.

Some of the different dishes he serves include Shrimp and Grits, with onion, peppers, mushrooms and bacon for a different twist. Tomato, Mozzarella, and fresh Basil is the most popular salad in the warm months. His seared Tuna with Ginger, Lemon, Honey and Soy dip is a big favorite. He also sautés fresh Brussel Sprouts with unusual spices. Also the Mac and Cheese is a powerhouse. The always-fresh-never-frozen Hamburger, called the Tall Pines, may be free if you can finish it. The “In the Rough” Lounge serves the best Bloody Marys along with Pot Stickers and Sweet and Sour Shrimp appetizers. Lounging on the elevated deck overlooking the most beautiful Donald Ross Golf Course and brand new putting green proves that happy hour doesn’t get any better than this.

What is the Favorite Entrée Chefs Choice? Tuna Steak or Marinated fresh Chicken Breast, seared and grilled with pineapple and red onion.
